The extra hang time from the higher altitudes and cooling Southern Ocean influence allows for a lovely flavour/tannin ripeness balance. With the use of five different clones, this wine shows the complexity and intensity that can be found in Denmark Pinot Noir. Sweet cherry flavours dominate the nose with some earthy complexity and raspberry lift from the whole bunch inclusion. The intense fruit flavour carries onto the palate and is coaxed along with stalky, savoury tannins and flinty French oak hints. Typical of Denmark Pinot, this wine is quite muscular in style and is well suited to careful cellaring over the ensuing 7-10 years.

The 2021 season posed some challenges with rain in early February followed by unseasonably cool temperatures delaying the start of the white harvest, although slowing everything down and allowing the flavour to develop was the benefit in the end.
The rain and cooler temperatures gave reds a much-needed drink, allowed colour to intensify and the following warmer finish allowed them to maximise flavour expression.
In the end, vintage 2021 started late, finished early and across the board quality very, very good.

Handpicked from our Denmark Home Block Pinot Noir, including clones 777, Droopy and Upright, and a mixed clonal block including 114 and 115. Fruit was chilled for 3 days prior to processing. Droopy was crushed and de-stemmed into small open fermenters with pre-fermentation cold soaking. 777 was allowed to ferment with 10% whole-bunch and stalk inclusion.The riper mixed clonal block underwent some partial carbonic maceration and Upright underwent full crush and de-stem into open fermenters. Ferments were inoculated with RC212 malolactic bacteria. All ferments, except the carbonic portion, were hand plunged 2x daily until dry (time on skins approx. 10 days). Wine aged in specially selected French oak (very tight grain – Medium Long and Burgundy toast) barriques, 70% new, 30% 2nd fill. The move to lighter oak and bottling early for 2021 signifies the aim to capture the delicate fruit expression from our Home Block here in Denmark.
