Made from 100% estate-grown fruit, our 2020 UNO Pinot Noir is one of our flagship wines. A glossy yet translucent garnet colour in the glass, the nose showcases savoury cranberry and raspberry aromas, with hints of subtle wood-smoke, dried sage and pork crackling. The palate is juicy and elegantly complex – the red fruit notes continue, and are joined by light, silky tannins, a wonderful medium acid structure and a light yet lingering finish.
Hand picked, chilled in the coolroom, 2 parcels of whole bunch small batch fermentations were allowed to initiate with wild yeast fermentation for 7 days. After day 4 the whole bunches were gently macerated by hand to allow colour development and on day 7 pressed to a new French oak Hogshead to mature for 14 months. The wine was hand bottled straight from barrel.
2020 started with a warm dry spring, followed by an aboverage warm and dry summer. Yields were low allowing fruit to mature earlier and faster than is normal. Wines from 2020 show softer textured and fleshy palates with ripe expressive aromas.
